Lemon Almond Biscotti Recipe

Ingredients:

For the biscotti:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Zest of 2 lemons
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract
  • 1/2 teaspoon almond extract
  • 1 tablespoon lemon juice
  • 1 cup sliced almonds

For the glaze:

  • 1 cup powdered sugar
  • 2 tablespoons lemon juice
  • Zest of 1 lemon

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. Mix Dry Ingredients: In a mixing bowl, combine the flour, granulated sugar, baking powder, salt, lemon zest, and sliced almonds. Mix well.

  3. Add Wet Ingredients: Add the softened butter, eggs, vanilla extract, lemon extract, almond extract, and lemon juice to the dry mixture. Mix until the dough comes together. It might be a bit crumbly, but that's okay.

  4. Form Dough Logs: Divide the dough into two equal portions. On a lightly floured surface, shape each portion into a log about 12 inches long and 3 inches wide. Place the logs on the prepared baking sheet, leaving some space between them.

  5. Bake First Round: Bake the logs in the preheated oven for about 25-30 minutes, or until they are firm to the touch and lightly golden. Remove from the oven and let them cool on the baking sheet for about 15 minutes.

  6. Slice the Logs: Using a sharp knife, carefully slice the baked logs into diagonal slices, about 1/2 inch thick.

  7. Second Bake: Arrange the biscotti slices cut-side down on the baking sheet. Return them to the oven and bake for an additional 10-15 minutes, or until they are golden and crisp. You can bake them longer for a crisper texture.

  8. Prepare the Glaze: While the biscotti are cooling, prepare the glaze. In a small bowl, whisk together the powdered sugar and lemon juice until you have a smooth glaze.

  9. Glaze the Biscotti: Once the biscotti have cooled slightly, drizzle the glaze over the tops of the biscotti. Sprinkle some lemon zest over the glaze for extra flavor and decoration.

  10. Final Cooling: Allow the glaze to set and the biscotti to cool completely on a wire rack before serving or storing in an airtight container.
